My Favourite Recipe



Food is something that we need to intake for the purpose of living. Hunger ceases with intake of food. But our appetite longs for taste and flavor in the food. The tongue is the taste organ for all beings acts as a sensor for taste and flavor. Different people have different tastes according to their food habits and demography, climate etc. I am neutral to all food habits. I like to experiment with new recipes. For years in my experimenting with recipes, by following TV shows and Books the best one I came across was Mushroom Paneer  Pulav .

Ingredients:-

Basmathi Rice -1/2 kg,

Sliced Mushrooms – 250 gms ,

Paneer Cubes – 250 gms ,

Chopped onions -100 gms

Cloves – 10 no’s

Cardamom – 10 no’s

Cinnamon – 2-3 gms

Bay leaf – 4 No’s

Shah Jeera –1 tablespoon

Cashew Nuts -10-15 no’s

Oil -200 ml

Gee – 10 tablespoons

Coriander – 50 gms

Mint leaves – 50 gms

Red Chilli Powder -2 tablespoons

Dhania Powder - 2 tablespoons

Jeera Powder - 2 tablespoons

Salt - As much required

Ajina Moto - A pinch

Tasting salt - A pinch

Ginger Garlic paste-3 tablespoons

Procedure:-

Soak the Basmathi rice in the water for ½ hr. Take 100 gms of sliced onions and fry them deeply in oil till golden brown and take them aside in a separate bowl. First take a frying pan and add two spoons of ghee  and one bay leaf and 4-5 each of cloves, cinnamon, 1gm cardamom, sliced mushrooms washed with salt, paneer cubes and add salt to taste. Fry the contents till all the moisture is lost in the mushrooms. Then add a pinch of ajina moto, tasting salt, dhania powder, jeera powder, red chilli powder and fry them for two minutes. Take the content into a bowl and keep aside. Next take a pressure cooker and add 5 spoons ghee, 30 ml oil and ginger garlic paste and fry it for 2 minutes. After that add all the spices, 100 gms chopped onions, 50 gms  mint leaves,25 gms coriander leaves, cashew nuts, bay leaves and sufficient salt, 3-4 green chillies and fry them for 2-3 minutes. Next add the soaked rice after draining the water and the content of fried mushroom and opener slices, and sufficient water. Close the pressure cooker and let the rice get cooked until two whistles. Finally garnish the cooked rice with the deep fried onions and 25 gms coriander. And then the Mushroom Paneer Pulav is ready to taste. It can be taken with Raita.

Nutritional Value:-

The recipe is not only tasty but is also a nourishing diet. Mushrooms contain 80-90 percent of water and give 100 calories of energy. They are a good source of potassium, riboflavin, niacin and selenium. Mushroom has prevents cardiac diseases and prostate cancer in males. Paneer is a good source of protein, calcium and prevents orthopedic diseases, balances insulin levels in older people, improves growth and repair of tissues and muscles in the body. It improves the bowel system too. Ghee has rich nutritional value providing essential fatty acids to the body .It balances the stomach acids and promotes good mental functioning. It inhibits the growth of cancerous tumors. Ghee also helps to retain the mucous lining of the stomach.
